The other causes are defective temperature probe, bad PID controller, heat concentration due to heat reflector, improper P setting, not adjusted. TLDR Heat diffuser plate in place resulted in a huge difference in temp from left to right side. Your Pit Boss not holding temperature or temperature swinging mainly due to inadequate airflow, low-quality pellets, dirty grill, improper start-up, and noting grill temperature too early. To be clear, this is the heat diffuser plate: Seems to be a great way to even things out. Did a great job for bice even heat on my brisket. Putting this on does take away the ability to search right there in the middle. The temps are always within 3° of each other. You have to take out the original heat diffuser, which sucks anyway. I did do the normal start up procedure, but did not run the exact same test because I had to cook dinner, but you can see that the temps are way closer left to right side.
The next night I removed the heat diffuser plate and placed thermometers in the exact same place. You can see that the grill us much hotter on the right side. Smoke setting > 350° for 30 minutes, then I backed down to 250°. I started the grill with the normal startup procedure.
